Guilt-Free Chocolate Cake

Are you a cake and chocolate lover? Want to bake the simplest and most delicious butter cake that your whole family will love? Well, this recipe is perfect for you! It's a moist butter cake topped with creamy chocolate icing. It uses guilt-free ingredients suitable for keto, whole food plant-based, vegetarian, or vegan diets. You can customize the cake with different flavors like lemon or pineapple, making it your own creation. Ok, enough of that…Let's get to the recipe!

Recipe

This recipe makes 1 layer cake or 6 cupcakes. Just double the recipe for 2 layers.

Ingredients:

Cake

1 cup nut milk or coconut milk

3/4 cup honey or maple syrup

(can sub sweetener of choice with 1.5 tsp of liquid stevia)

4 eggs or 4 flax eggs

( 1 flax egg =1 tbs of flax meal and 2.5tbs of water)

1 tbsp vanilla extract

1 tsp butter flavoring

1 cup coconut flour

1/4 tsp sea salt, pink himalayan salt, or kosher salt

1 tbsp of baking powder

Frosting

1 cup raw cashews ( walnuts or almonds can be a substitute)

1/3 cup walnuts (can use almonds or macadamia nuts as a substitute)

2 tbsp unsweetened cocoa powder

1 tsp vanilla extract

2/3 cup of pitted dates

1/3 cup of nut milk

Instructions

Preheat oven to 350 degrees. Place cracked eggs or flax egg, nut milk, sweetener, vanilla extract, and butter flavoring in a medium-sized bowl and whisk until it is well blended. Then whisk in the flour, making sure there are no lumps. Next, add baking powder and salt mixing with a silicone or rubber spatula. Now, you want to pour the batter into a cake pan, place it in the oven, and let cook for 20 minutes.

As the cake is baking you can make your frosting by placing all of the ingredients into a blender and blending until smooth. This step may take a few minutes depending on your blender. You may have to scrap from the sides or add another tablespoon of milk if it is too thick for your blender.

The cake is done if you place a toothpick in the center and remove it and it comes out clean. Once the cake is done you can remove the cake from the oven and let it cool for about 15 minutes. After it has cooled you can frost your cake, cut a slice, and enjoy!!!
